Middle Eastern cuisine has a new home in Merrylands, and it goes by the name IFTAR. Spearheaded by Jeremy Agha, this vibrant dining destination blends heritage with innovation, creating a space that celebrates tradition while embracing the modern. With its official opening set for Saturday, January 18th, IFTAR is poised to redefine the culinary landscape of Sydney’s west.

A Heritage Rooted in Love

IFTAR, meaning “break-fast” in Arabic, is more than just a restaurant—it’s a love letter to family, culture, and the joy of sharing food. Jeremy Agha’s mother, Rita, is at the heart of this story. Her recipes, cherished and passed down through generations, are the backbone of IFTAR’s menu. Agha shares, “The hidden meaning is, IFTAR can’t be spelt without the letters of her name. There’s no IFTAR without Mum.”

A Menu to Remember

IFTAR’s menu is designed to evoke the warmth and generosity of Middle Eastern dining. Guests can expect to gather around tables brimming with small plates, hearty mains, and an array of vibrant flavours. Highlights include:

  • Wood-fired Manoush: A treasured family recipe, brought to life in a traditional wood oven.
  • Shawarma Tacos: A playful reimagining of the classic shawarma, blending bold spices with a modern twist.
  • Wagyu Kofta Dumplings: A unique creation, combining succulent wagyu beef with rich, spiced flavours.

Central to the menu is the woodfired sourdough bread—a family tradition that encapsulates the essence of IFTAR. “You can’t dine here without it,” Agha says.

More Than Just a Meal

“Middle Eastern dining is about more than food. It’s the experience of filling a table with loved ones, sharing stories, and savouring flavours together,” Agha explains. At IFTAR, every detail—from the food to the atmosphere—is designed to make guests feel like they’re part of a family gathering.

A Space That Tells a Story

Designed by renowned architect Matt Woods, IFTAR’s interiors echo the menu’s philosophy. Clay walls, travertine floors, and natural timbers create a warm and inviting environment that’s both elegant and grounded in tradition. The space is a seamless blend of modern aesthetics and cultural homage, providing the perfect backdrop for a dining experience unlike any other.

Honouring Tradition, Embracing Innovation

Jeremy Agha’s journey began in his family’s Lebanese bakery, where he cultivated a deep appreciation for food, tradition, and community. At IFTAR, he brings this passion to life, balancing the authenticity of Middle Eastern recipes with contemporary influences and techniques. The result is a dining experience that respects the past while appealing to modern palates.

A New Chapter in Sydney’s Dining Scene

IFTAR is more than just a restaurant; it’s a celebration of heritage, reimagined for today. With its bold flavours, inviting atmosphere, and deep cultural roots, IFTAR promises to be a cornerstone of Sydney’s evolving dining landscape.

Whether you’re gathering with family, celebrating with friends, or exploring new culinary horizons, IFTAR offers an experience that’s as rich and layered as its dishes. “IFTAR isn’t just a restaurant; it’s a place to connect. To share. To create memories,” Agha says.
